Keeping it Cool: Lighter Faves for Summer Days

Think of this blog post like the “light” section of a chain restaurant menu. When summer is in full force, I have a hard time wanting heavy food. If you’re not in the mood for a salad at home but you need some easy veggies or other lighter fare, these are my recommendations. I’m not a salad lover by nature, so this list focuses on other ways to add in plants and balance.

Gooder Goods

This is probably my favorite avocado toast in all of Phoenix. They have a nice selection of snacks and healthier baked goods and lattes. The protein waffle is also excellent. If you’re in the mood for a workout or live music, they do that too.

It might not sound like a restaurant, but they’re open all day long and serve some of the best vegetarian food in town. I’m addicted to the Royale Sammie (I recommend eggs and avocado on it), their hummus, and the high quality matcha.

Copper Star

My go to is the bagel sandwich, subbing the meat out for roasted veggies, but every sandwich on the menu is great. Their bakery case also has an assortment of gluten free and vegan options.

Verdura

This plant-based restaurant has a wide variety of types of food. Whether you’re looking for a bahn mi or mac and cheese, they have something for everyone. They also serve alcohol and do a happy hour.

Cava

This east-coast-originated chain recently opened up locations in the valley, and as a former east coaster, I was psyched when they did. It’s like a Mediterranean Chipotle, where the secret is loading on toppings and sauces.

The Beach House

I love their cactus, the vegetarian option among protein choices. If I’m looking for something sweet but not too heavy, adding on a frozen drink is great. They’re non-alcoholic ice slush, made to order with the flavored syrup of your choice. (You can’t go wrong with blood orange!)
